This Thanksgiving I find myself reflecting on my own journey with the iconic centerpiece of the holiday table: the roast turkey. It is no secret that turkey is the central symbol of Thanksgiving. Traditionally, turkey is consumed at Thanksgiving feasts across the United States, in part because it was native to America and because it is a symbol of the bounteous richness of the wilderness, but did you know that turkeys are not only a symbol of Thanksgiving but also fascinating creatures with a rich history in North America?
